200g (7 ounces) aubergine (eggplant). 400g (2 cups) rice. 300g (10 1/2 ounces) minced lamb. 200g (7 ounces) cubed lamb. 75g (5 tablespoons) clarified butter. 130g (1 cup) pine nuts. 130g (1 cup) almonds. The aubergines in this dish can be replaced with desert truffles (kama in Arabic). They are less pungent and cheaper than the European variety. 1 Fry the pine nuts and almonds in 4 tablespoons of the butter and set aside. Dry fry all the lamb until browned and season with salt and pepper.

300g (10 1/2 ounces) vine leaves. 450g (1 pound) quail meat or 3-4 quails. 100g (3 1/2 ounces) rice. Juice of 2 lemons. 1 Boil the quails for 10 minutes, remove the meat and throw away the water. Roast the quail in an oven for 20 minutes. Leave to cool. 2 Remove the meat from the quails and chop finely. Keep the bones aside. Mix the meat with the rice and salt. 5 Place the quail bones at the bottom of a saucepan. Carefully lay the vine leaves over the bones. Cover with water and lemon juice.
