Let's Go Vegan! Going Vegan for Health. I’ve come to the conclusion why the vegan diet for me is difficult: I went cold turkey. I should have eased myself into it. Okay, I love having cereal (usually whole grain shredded wheat), with blueberries and bananas or raisins and almond milk. BUT, enough already! WILD RICE SALAD WITH VEGGIES. 1 box of Uncle Ben’s long grain and wild rice quick cook. 2 cups of cooked brown rice, re-heated. 3 green onions, chopped. 1/2 cup toasted chopped walnuts (or can substitute pecans). 1/2 cup dried cranberries. 1 can of low sodium whole kernel corn, rinsed and drained. 1 can of black beans, rinsed and drained (can be heated if desired before adding) – these are optional of course. 3 peeled shallots, finely chopped. 2/4 lb button mushrooms, sliced. 1/2 tsp grated fresh ginger.

They come in my house, my buddy Baby and I have to play nice with them, share treats, and then share ball time!
