August 9, 2013 · 5:29 pm. 4 lb un-peeled courgettes. Slice the above thinly and cover with cold water and add 1/4 cup of salt in a large (plastic) bowl. Cover with a plate (and weight as required) to keep the vegetables submerged. Stand for 2 hours and then drain thoroughly. Boil the following for 2 minutes (in a preserving sized pan):. 6 cups white (wine? 35 cups granulated sugar. 2 tsp celery seed. 4 tsp mustard seed. Add the courgettes and onions and remove from the heat. Stand for another 2 hours.
