Black Bean Casserole – Granola Liz

If I don't love it, I don't eat it. 1 can black beans (rinsed and drained). 1 medium onion (minced). 1 clove garlic (minced). 2 to 3 small zucchinis. 2 cups whole kernel corn (frozen). 1 cup of your favorite salsa. 1/4 cup chopped flat leaf parsley. 3 tablespoons olive oil. Salt and pepper to taste. Vegan parmesan cheese (optional). Saute the onion, garlic and parsley until the onion is transparent. Cut zucchini in half lengthwise then in 1/2 inch slices. Great served with a side of brown rice. Enjoy!

If I don't love it, I don't eat it. July 30, 2012. I went to a friend’s house the other day to help pick green beans. His entire back yard is a garden! By the time we were done with the beans, we had filled two grocery bags. Before I left, my friend loaded me up with beets, broccoli, cabbage, red onions, new potatoes and cilantro. It was like I had just been to the grocery store! I knew I had to cook something up soon and so I threw this recipe together and called it Garden Beet Roast. Diary of a SAHM.

Wednesday, December 29, 2010. Great, Boring appointment today :). Everything is looking good :) I was a little worried that this appointment would show high blood pressure and I'd be put on bed rest. That wasn't the case. HOORAY! My mom, sister, and I are going out this weekend and I was so worried I'd miss it. How can I possibly get any bigger? I honestly feel like there is no room left! I know every pregnant woman gets to this point. I guess I figured I'd get there a little later. Oops, a little behind!

The kids played with delicious smelling gingerbread play dough. It was fun to decorate a tree as they pleased, lights and all, for free play time.
