Sweet Potato Cornbread and Sweet Potato Soufflé. Some time back I ran across a recipe posted on a foodie board for Sweet Potato Cornbread. The title appealed to me because I'm the only one at my house who really enjoys sweet potatoes plain. We get them fairly often in the veggie box, so I was thinking this could be a good way to use them. I made this cornbread tonight. Baked in a cast iron skillet and turned out on a small Fiesta pizza tray. Sweet potatoes from the veggie box. 1½ cups yellow cornmeal.

Poached Leeks with Pink Peppercorn Mayonnaise. As I mentioned in the post about Pink Peppercorn Mayonnaise. I first made this dish for Easter dinner in 1986. It's been a tradition around here ever since. Start with some nice leeks:. Trimmed and ready to cook:. Chilled overnight, plated, and ready to serve:. For our Easter table this year we chose lilac and chartreuse P-86 Fiesta. I thought this salad looked quite nice on this colour combo. No Churn Pomegranate Ice Cream tonight's dessert. This is such an easy recipe from Nigella Lawson in Nigella Express. We love it around here and it can easily be doubled for a crowd. No Churn Pomegranate Ice Cream. 2 pomegranates (plus seeds from a third for decoration, optional). 1 1/2 cups powdered sugar. 2 cups heavy cream. 1 What really makes this easy is that I always use 3/4 cup POM for the pomegranate juice, and add the fresh lime juice. Pomegranates are so good! Your ice cream looks delicious too.

Medical Update 20 July 2011. I haven't done a medical update in quite a while, so it is past time. Currently I am in the hospital at Vanderbilt. It has been two years and two days since my bone marrow transplant and I was not really planning on being back in the hospital now. Do not believe anyone that tells you that.
