Green and Lean: Spinach Pie
http://greenandlean09.blogspot.com/2015/04/spinach-pie.html
Tuesday, April 28, 2015. Here's another entry for the "tasty but ugly" file. There are so many posts that fit that category on this site, I should probably consider it as a new title for the blog! I can't even show you what this Spinach Pie looked like on a plate because it was such a mess! But as I sit here enjoying leftovers for lunch, I can't get over how yummy it is so I need to record the simple and healthy recipe. And it worked just fine. 1 large yellow onion, diced. 1 Tbsp olive oil. 1/2 tsp black...

Green and Lean: Honey Mustard Roasted Chicken
http://greenandlean09.blogspot.com/2012/09/honey-mustard-roasted-chicken.html
Sunday, September 23, 2012. Honey Mustard Roasted Chicken. For someone who gets nervous cooking for more than 3 people, I'm surprisingly very much looking forward to cooking for 25 in a couple of weeks. Cassandra is flying back from New York City and we are co-catering a large pre-wedding family dinner for her beautiful little sister Libby. I was excited to try to create a fall menu to incorporate wild rice, squash, kale, Brussels sprouts, and apples. Easy! Honey Mustard Roasted Chicken. 1 Tbsp olive oil.

Green and Lean: Greek Turkey Burgers with Tzatziki
http://greenandlean09.blogspot.com/2015/05/greek-turkey-burgers-with-tzatziki.html
Monday, May 18, 2015. Greek Turkey Burgers with Tzatziki. But really, life hasn't changed much around here. The biggest difference I can point to is the fact that I've traded my daily glass of wine for an almost daily scoop of ice cream. We are gearing up for another Memorial weekend camping trip and hosting dinner parties and doing yardwork and just living a happy newlywed life. I am enjoying every minute. 1/2 yellow onion, diced. 2 cups spinach or kale, chopped. 1 Tbsp olive oil. 1 Tbsp olive oil.

Green and Lean: Squash and Apple Soup with Wild Rice
http://greenandlean09.blogspot.com/2011/10/squash-and-apple-soup-with-wild-rice.html
Tuesday, October 18, 2011. Squash and Apple Soup with Wild Rice. My t-t-teeth are ch-ch-chattering today because it's f-f-freezing outside! Time for the first soup of the season, I think. The squash has been out of this world delicious this year. I think I've roasted and eaten 7 of them already this season. Two versions of squash soup currently exist on the blog, one that's plain but with added homemade ravioli. And another that adds spicy chipotle peppers. Both are good, but this one is the best. 2 drie...

Green and Lean: Wasabi Pea Encrusted Tuna Steaks
http://greenandlean09.blogspot.com/2010/01/wasabi-pea-encrusted-tuna-steaks.html
Friday, January 8, 2010. Wasabi Pea Encrusted Tuna Steaks. I don't have a whole lot to say about this except that I think it was the best salad I've ever made. And I have made a LOT of salads, many of them showcased right here on this blog. This one is so pretty and fancy that you'd have to pay close to $20 to get this in a restaurant. The sad thing is, most restaurants just don't make salads up to my standards (exception: Nicoise at Barbette), so I'm stuck inventing new ones at home! I sliced up the tun...

Green and Lean: Dragon Bowl with Tahini Dressing
http://greenandlean09.blogspot.com/2012/06/whats-dragon-bowl-i-ask-as-i-am-sitting.html
Saturday, June 2, 2012. Dragon Bowl with Tahini Dressing. What's a Dragon Bowl? I ask as I am sitting on the floor of Cassandra and Ben's beautiful light-drenched and art-dappled apartment in New York City. We've just rehashed one of the most exquisite (and also screamingly FUN) wedding weekends I've ever experienced, and now the newly wed Cassandra and Ben are hosting us for one last night of New York camaraderie. As soon as I had a free night back home in Minneapolis, I stocked up on veggies that I was...

Green and Lean: Rosettes and Fattigmand
http://greenandlean09.blogspot.com/2012/11/rosettes-and-fattigmand.html
Saturday, November 24, 2012. Unfortunately, in the food realm, Norwegians eat very bland white food that I have historically turned up my nose at. Lutefisk, or "fish jelly" was a horrifying annual occurrence at our Christmas Eve table until Grandma finally realized she was spending a lot of money and time on something that was only used as a punchline. Our best Norwegian food traditions are the pastries on the Christmas cookie tray - Rosettes and Fattigmand (pronounced futti mon. We make Rosettes first, ...

Green and Lean: Okonomiyaki
http://greenandlean09.blogspot.com/2012/08/okonomiyaki.html
Sunday, August 12, 2012. It's time to play Refrigerator Surprise, everybody's favorite game show where you must make a healthy dinner solely out of ingredients scrounged from your fridge or pantry - no grocery shopping trips allowed! Ali from Green and Lean, come on down! You're the next contestant on Refrigerator Surprise! I'm so good at this game. Sure, it's been a full week since I was last at the Farmer's Market and I know food is a bit scarce, but let's see what we've got to work with here. Oh crap&...

Green and Lean: Strawberry Icebox Cake
http://greenandlean09.blogspot.com/2012/06/strawberry-icebox-cake.html
Thursday, June 14, 2012. Do you have air conditioning? I don't have my window A/C units installed yet this year so when it gets hot, I make do. That means NO extra heat creating activities, especially firing up the gas oven. It was supposed to be hot today so I made an icebox cake to serve at my cocktail party. It's especially delicious if you add the extra antioxidants, vitamins, and minerals from whatever fruit is at the peak of ripeness at your local Farmer's Market (strawberries for me right now!

Green and Lean: Almond Milk
http://greenandlean09.blogspot.com/2012/01/almond-milk.html
Sunday, January 15, 2012. I'm doing a very mild food experiment on myself this month. For about two and a half weeks, I'm going gluten-free, vegan, caffeine-free, sugar-free, soy-free, and alcohol-free. I'm right smack dab in the middle of the experiment now, which means I have a 100% plant-based, whole foods diet. So, from now on I'll be saving money and making my own almond milk. I use a regular blender (got a nice new one for Christmas! Adapted from Meghan Telpner. 2 cups cold water. Line a colander o...
