Monday, April 28, 2008. 1 cup salted butter (softened). 1 cup brown sugar (packed). 1 tsp vanilla extract. 1 1/2 cups all purpose flour. 1 tsp baking soda. 3 cups old fashioned oats. 1 cup chocolate chips. 1 Preheat oven to 350°F. 2 Grease cookie sheet. 3 Beat butter and sugars until creamy. 4 Add eggs and vanilla; mix well. 5 Combine flour and baking soda. 6 Add to butter mixture; mix well. 7 Stir in oats and rasins. 8 Using rounded tablespoons, roll into balls.

I didn't measure; I just covered the bread with sauce, then added lots of cheese and the pepperoni. I didn't cut the pieces till after it was done. It came out perfectly! It's quick, pretty, and filling. My kind of cooking! Adapted from: Family Circle- June 2007. 1 loaf Italian bread. 1/2 cup jarred (or canned) pizza (or spaghetti) sauce. 2 cups shredded mozzarella cheese. Oven to 400 F.

If there's any leftover egg mixture, just throw it in the pan and make scrambled eggs. Serve it on the side. 20-22 slices of bread. Heat frying pan or griddle moderately hot. Grease with butter.
