Monday, December 29, 2014. I read somewhere that pennies are great pie weights because they are light and good conductors of heat. Filled little cupcake papers keeping fingers crossed. The Nordic Ware pan is dark metal which always makes me twitchy, so I lowered the temperature. Twenty -five degrees and like an over protective mother hen, constantly checked them. Sunday, May 3, 2015. Rose's Blue-Rhu pie is delicious! The rhubarb seems to mellow out the blueberries. The blueberries mellow out the rhubarb. Until it's a faint note in the background. Even those in my family who don't care for blueberries like this pie. Rhubarb is popular in the mid west but not so much here on the west coast. It's finally in a few markets. For this week’s Sweet Melissa selection JoVonn of the Givens Chronicles. I was in the mood for some fall flavors, so I added 1 tsp of pumpkin pie spice and replaced 2 TBS of the butter with 2 TBS of canned pumpkin puree. I think the pumpkin made the brittle a bit chewier than normal and the pumpkin pie spice gave it a nice kick. Great selection, JoVonn!
