Baked Risotto with Salmon. 2 tablespoon Extra Virgin Olive Oil. 1 medium sized onion, finely chopped. 1 teaspoon sea salt. 1 heaped tablespoon capers, whole. 1 cup Arborio rice. 1 x 400g can of whole or crushed tomatoes. 100gsm smoked salmon, torn into strips. Handful of grated Parmesan cheese. Remove and allow to sit for a couple of minutes, then serve. I like my risotto to have a little ‘sauce’,...
