Early December finds Sam and I working on a hillside above our biggest sugarbush, which we call Maple City. Our maple pipeline system stops at our western boundary, but the maples continue to flourish up the hillside on the land of our neighbors, Hugh and Sheila Clark. We hike to and from the job site every day through woods that feature lines of stone.

Cooking Grassfed Beef or Lamb. Cooking grassfed beef and lamb is different from cooking beef and lamb from the supermarket. There may be exceptions based on individual taste, but generally grassfed meat likes to be cooked slowly over low heat. We suggest you start by warming the meat to room temperature. Never cook it with high heat. We have had best results cooking grassfed beef and lamb to rare or medium. Well done is OK, but here it is very important to cook slowly with low heat. 1 can cannellini beans.
