This tasty dish is so easy to make as it has very few ingredients; relying on the chorizo, garlic and scallops to give it a distinctive Spanish flavour. This is a variation on a Nigella Lawson recipe which uses even fewer ingredients (just scallops, chorizo, lemon and parsley).
