We have 9 guests online. Tolsta Chaolais mutton comes from Hebridean Blackface sheep. There is no sheep hardier than the Hebridean Blackface if like ours they live roaming free on the hills and moors of the Outer Hebrides. People do not bother these sheep very often. We gather the sheep from the moors six times in the course of each year. We do not slaughter lambs and our heather fed mutton comes from animals that are at least two and a half years old. Mutton is also featured on 'The Mutton Renaissance'.

Tolsta Chaolais is a very old fashioned village. Crofters here still graze their sheep in the traditional way, on the island's open hills and moors, going out at intervals to gather them in accordance with the dictates of the village calendar. The Lewis Peat Calendar fundraising project is now at an end, and the sums raised for charity are as follows:. 21,645.28 (after expenses), all of which went to Leukaemia Research. 9,88924 (after expenses), of which Leukaemia Research will receive 4,000, with the rest going to the Anthony Nolan Trust. Peat calendar on Channel 4 tonight.
