2000 gr Milk whole. 400 gr Heavy Cream. 400 gr Yolk pasteurized. 100 gr Glucose in powder (atomized). 10 gr Cremodan 30. 400 gr Pistachio paste 100% Sicily. Mix all ingredients except the paste. Bring lightly to 65C. Place the mix again in a SS bowl and start chill over Ice. Add the two pistachio paste helping yourself with a rubber spatula and a whisk. Once the mix reach 10C pour it in the Carpigiani gelato maker. Churn it for about 15/20 min check the consistency. Serve it at -12C. Follow “chef t...
