Fields of Plenty: Thyme

An evergreen herb, thyme is very flavorful, despite it's small delicate looking gray-green leaves. It maintains it's flavor well even when dried. It matches well with most meats and veggies. Keep dry in a plastic bag in the fridge for up to a week. Or, put the stems in a jar of water and keep in the fridge for a couple weeks. Remove wilted, discolored leaves/stems as they appear. Rinse under running water. Pat dry. Remove the leaves from the woody stem. Roasted Tomatoes with Garlic and Lemon Thyme.

Eggplants are a member of the nightshade family, along with tomatoes and potatoes, and can therefore sometimes be problematic for people with arthritis. The large dark purple eggplant - Italian Eggplant - is the most common, but we grow a wide variety from long and skinny to short and stripy. Keep dry in a plastic bag in the fridge for up to a week. The little and skinny eggplant varieties have tender skins, so no need to peel. You may want to peel the large Italian ones. Sauteed Eggplant with Honey.

Fields of Plenty: Cucumbers

Cucumbers are in the same family as melons (which is why an unripe watermelon tastes like a cucumber). You'll see slicing cucumbers, kirbys (pickling), and persian cucumbers June through November, give or take Mother Nature's whims. Cucumbers are smooth skinned and dark green. Cucumbers are traditionally used for pickling but can be used in place of the slicing cucumber. They are short and bumpy. Keep in a plastic bag in the fridge for up to a week. Chiogga beets have a red-ish. Outside and red and white stripes. Inside; they're also known as. Candy cane beets.". Beets are a root vegetable. You can eat the nutrient-rich leaves as well as the root bulb. Beets have a high level of the betalain pigment and will therefore bleed (and stain! Their color as you cut/cook/eat (so if you are a klutz like me, don't wear white and eat beets). Betalains have been to show antioxidant, anti-inflammatory, and detoxification support for the body.
