Monday, August 26, 2013. Dinner - Filled Squash. Our new neighborhood is proving to be quite friendly. We've already received banana bread, dessert bars, cucumbers, and squash! Tonight I used the squash as the base for a simple filling. Something about black beans, corn, and rotel that makes anything great. The only other thing to this recipe was shredded chicken (I've used shredded pork and I'm sure ground hamburger, or maybe even quinoa would work as well). 2-3 chicken breasts, shredded. Thursday, October 11, 2012. Happy Birthday, Chris! Chris had a birthday on October 1. The kids and I were leaving to go out of town the morning of his birthday so we celebrated the day before. As exciting as birthday's get when you're in your 30's, we had peanut butter pie and some presents. Wouldn't you be excited to get a leaf blower? Sunday, January 29, 2012. Simon loves to sing Jesus Loves Me or in his case Yes Me. We sing it a lot of times before bed. We sing it in the car on one of his cds. We sing it while watching one of his dvds. And on this particular day he crawled up to the piano to sing it with Mimi!
