Pop rock mom muses. I haven't kept you up to date, but it's a sign that things are busy around here. I like busy. I am effective when busy, sunken when inert. Inert when immobile. It's a vicious cycle. Today I am the opposite of sunken, though. I'm downright animated! But only because these past two days have been a BLAST. Yesterday I got to be on the radio with an Irishman. Then later found myself holding court with said Irishman. Luck o' the Welsh! Look at me, all relatively radio ready!

Pop rock mom muses. Hello W edding Season. I think I'm ready. I love this planning phase. I can almost. I think there is a fine line between craving excellence and taking things too far. Sometimes during this time of year, I wake up worrying over some detail for an event that is due to occur weeks or months from now. I need to find the balance of caring a LOT, and perhaps caring too much.and losing sleep! I enjoy all of this wayyyy more than I ever planned, much more than probably necessary.

These are super easy and really yummy! 1 block firm tofu. 1 package flour or corn tortillas (the small size). 1 1/2 cups corn. 1 bunch chopped, fresh cilantro. 2 cups shredded cheddar. 1 can enchilada sauce. Cindy mentioned this recipe when we walked on Tuesday and she's so busy I thought I would post it for her. I made it for dinner the other night and it's truly fabulous. not low-cal, but so delicious it's worth it. The original recipe calls for asparagus, but since it's out of season Cindy substituted peas. 2 Tbs olive oil. 3 leeks, cleaned well and chopped coursely. 1 cup frozen peas.

For my kids, it was worth the step of putting the whole batch in a food processor so that the cilantro pieces got really small.
