So since we had tons of cuban blk beans left-over (we’ve been also adding them on top of salads, mixing in with our eggs [when we’re eating non-vegan] and just feeding them plain to rwd) I puree’d some up and we made vegan cheesy tortillas. Black Bean Puree Cheesy Tortillas. 4C cuban black beans. In their cooking liquid. Spanish rice (also left over from the night we made the cuban blk beans). BIG BATCH of Cuban Black Beans.

So I saw these lovely yellow gold ball chain petite rings on FAB. But of course they had sold out…so when I found them in her online store. At $100 a pop (knowing of course I’d want 4, one for each finger) I knew I had to hold off and think about it. But I couldn’t stop OBSESSING over them. I’d saved the photo looked at it all the time! I can make that.

Monday, February 14, 2011. We feel extra blessed this year with one more to LOVE. Last night ended with Matthew getting the stomach flu :( So sad to watch my baby so miserable! I am a little behind with the blog :( So I thought I would just show you some highlights of the last 3 months! My cousin Brandon got married in June, so at the end of April, we had a shower for his bride to be, Angela. such a fun day! Matthew and MeeMee cuddled up on the deck watching a movie. so sweet! Matthew will have so many great memories with his MeeMee and Papa! This was his final program!

Thursday, June 3, 2010. First Cabin Weekend 2010. We had our first weekend at the cabin over Memorial Day! The weather was unbelievable! Matthew and I went down on Thursday with my parents and the rest of the crew came on Friday through Monday! Spents lots of time in the sun! It was so fun! The Ehmkes were there for the long weekend too! We spent one morning on a sandbar near Pepin, otherwise, we hung out at the cabin and relaxed! I even got a pedicure on the beach from my niece! Here are some highlights!

So since Cassandra (the chicka mastermind behind 30daysofGOODFOOD pointed out Rising Moon makes a vegan ravioli (I’ve been scouring for a non-dairy rav to keep for back up dinner in the freezer but ha obviously not hard enough! I was super stoked to find it happily sitting in the freezer aisle right next to all the other raviolis. 2 TBS lemon juice.

I did however make this last night for dinner [albeit, no photo was taken]. It was good…definitely felt like a better Fall meal though, than Spring…. H 1 Ravioli in Sweet Potato Sauce. 2 packages vegan rising moon ravioli. 2 tsp minced garlic. 1/2 medium yellow onion, chopped. 1 large sweet potato, peeled diced. 1 C almond milk. 2 red bell peppers, cut into strips.
