Red braised pork belly is a dish I cook fairly often. In the past, I have cooked it many ways, in a wok, in a dutch oven on cooktop, in a dutch oven in the oven, in a pressure cooker. My recent cook for this dish was in a combi steam oven. Pork belly, cut to size. Ginger, a few slices in thumb size. Spring onion, two or three stalks.
