This will be the Amer'kin version: Mac and Cheese. I made this a few weeks ago with leftover cheese from our "Wine and (Grilled) Cheese" party. Mac 'n Cheese with a Kick! 2 tablespoons flour (whole wheat is fine). 1 1/2 cup skim milk (or whole, or - heaven forbid - cream, if that is how you roll). 1 standard piece of bread worth of bread crumbs, toasted.

Here is a method (adapted from Cook's Illustrated) that is fool-proof. A whole chicken (around 3 pounds). 2 tbsp olive oil. A deep skillet that can go stove top to oven. Some good kitchen shears. 1) Wash the chicken and pat dry. Pre. Heat oven to 375. 2) Remove backbone using kitchen shears (use your strength! 4) Press down to flatten the bird.

Sunday, November 9, 2008. Yesterday Ashley and I visited a couple of specialty groceries we hadn't been to, Center 1 Market. And Allen's Gourmet Grocery. Allen's is fairly new and a bit like LaDonna's. So I'm not sure how long it will stay in business. They really don't have too much out of the ordinary, though the "salt bar" is a nice touch.
