Since my baby is almost 20 years old I really miss all the Halloween and trick or treating fun so I go with my best friend Ashlie and her kids Bella and Callie. She really loves Halloween and she lives in a neighborhood that's really goes all out for the kids! This is Bella she was a skeleton! Ashlie did a great job on her makeup! Ashlie loves to decorate for Halloween and she did an awesome job on her mantel. We had so much fun and lots of yummy food!

Friday, February 8, 2013. Another version of enchiladas we make is chicken mole enchiladas. Use a rotisserie chicken. Pick the meat off and mix with mole sauce. Use that as the filling for the enchiladas. I like to use spinach tortilla wraps for these. For the sauce we made a white sauce, added more mole sauce and some chillies in adobe sauce. Put the enchiladas in a lightly sprayed pan, cover with cheese and sauce. Bake until hot and bubbly. Eat with guacamole and plain Greek yogurt (or sour cream).
