To pay respects to such a nutritious and high in anti-oxidant fruit, I decided to make Lemon-Blueberry Muffins from the America Test Kitchen. I followed the recipe pretty closely except to swirl in some blueberry jam that was bought from Stonewall Kitchen. Their Wild Maine Blueberry Jam. Is delicious and it increased the intensity of blueberries.

The Lunar New Year usually falls within the last two weeks of January or the first two weeks of February. This year, the year of the Tiger, it happened to fall on February 14th! Cookbook and found their Coconut Pound Cake recipe. Ive doubled the recipe because it calls for 3/4 cup cream of coconut (note that its not coconut milk) and rather than leaving the rest in the fridge to dubious means, why not finish it all in one bake?
