細うどん 黒門さかえ のホームページ - http:/ www.hoso-udon.com/. その頃は、団子汁の様なもので こんとん はくたく と呼ばれていたようです。 うどんの作りの極意は 土三寒六 土とは，土用 盛夏 の事 、夏が三倍に薄めた塩水、冬が六倍、春秋が五倍の塩水を用いるのが理想なのですが、その時の気温、湿度等で変わる、デリケートな食物なのです。 よく言われる、 きつね と たぬき のお話です。 当店では きつね というと、甘辛く味をつけた京揚げ 肉厚でしっとりしています。 関東で言われている たぬき は天かす 揚げ玉 が入っている物のことを言うようですが、大阪では はいから と言われています。 ややこしいようですが、大阪では きつねそば と たぬきうどん は無いようです。 京都では、きつね うどん、そば とは刻んだ油揚げの入ったもの、たぬき うどん、そば とは油揚げが入って、出汁はあんかけで、生姜をのせたもののようです。
