The Family Table
Monday, August 2, 2010. Sunday is usually a day that my husband and I go out for breakfast as date time. But this last Sunday I dragged him to the Farmer's Markets. It was neat to have him help pick out my vegetable for ratatouille. Eggplants, orange zucchini. Yellow and green round squash and tomatoes. Oh the thought of these veggies simmering all day is so good! I think I will serve it over a bed of lentils. Very Vegetarian and very low carb. So today I made the ratatouille.
