On this beautiful September morning the first signs of the coming Fall is obvious: mist over the rivers and in the valleys in the ‘Vallee d’Aude’, here in France. The indication that we will have a sunny day but at the same time inviting us to start our personal winter work which is going introversive, observing who we really are, what we stand for and what our purpose in this life is. The edible stage has past and now the next phase commences and another initiation episode has emerged. What is so surprising about this, is the contrast in the colors. At the same time that is why it is so enchanting. Such a wonderful process to be part of and to study. Miracles are just around the corner (just like artichokes…! Stamppot can be very nice, but you have to give it that little something extra, so you have to be creative. If you can buy (preferably organic) an entire celeriac, bulb, stalks and leaves, (like the beauty on the picture) buy it and make a gorgeous celery stamppot. I replace the rookworst by smoked tempeh and forget about the gravy, use a little butter instead. 3 stalks of celery, finely minced.
