Indicated, I brewed more belgian style beer on Sunday morning. 10 gallons of what was supposed to be a somewhat mild brew that could support 3 or 4 in an evening without dropping the hammer. and it didn't turn out that way. 08 August, 2010. At Whole Foods today, I noticed some lovely slabs of fresh pork belly in the butcher's case. Since they rarely carry fresh belly, I took this as an omen that it was time to cure some bacon. The pork was from Simply Grazin' Farm. I used the savory bacon recipe from Charcuterie. Brian Polcyn (a version was published in the NYT. A few years ago). It will cure in the fridge for the next week or so, at which point I will smoke it over apple or pecan wood. Online journal of my homebrewing fun. Well not much has gone on this week. As I post this my Pale Ale is still bubbling away. And that got me wondering. I did use a refractometer and not my hydro to test my samples. Perhaps it was user error. I dunno, we'll see what it like when I transfer it over to the keg Sunday.
