Lemon zest and Literature. Sunday, October 30, 2005. Blanching a vegetable means you boil or steam it till it's cooked, colorful, but still a little crunchy. Shocking a vegetable means you blanche it and then drop it straight into ice water. The ice water, as I've stated in an earlier blog, immediately stops the cooking process. I burned my wrist a few days ago and now have a nice purple mark. A guy at work asked whether I'd iced it right away, which I hadn't- "Do you know why we put ice on burns? Posted...

Lemon zest and Literature. Tuesday, November 22, 2005. I love days off. I also love reading culinary magazines and creating beautiful menus in my head (when I close my eyes, I see the carrots that were supposed to lean against frittatas Saturday night and kept falling over. Am I going crazy? I visit the resort kitchen so often when I'm dreaming at night, and apparently when I'm daydreaming too). I love, love, love the fall and Christmas season.
