Grilled corn lightly brushed with mayo-butter and sprinkled with cotija cheese and chili flakes. A delicious blend of Mexican cheeses, refried beans, and topped with chorizo. Three corn tortillas rolled with hand pulled steak. Served on a bed of lettuce-cabbage mix, drizzled with tomatillo-avocado salsa, sour cream, and cotija cheese. Finished with pico de gallo and cilantro. Add chicken, steak or carnitas. Our house favorite made with fresh avocado, tomato, onion, cilantro, and fresh squeezed lime juice.

Either way, the option to dine out as vegan. Vegetarian or gluten free. Is not always so simple. I grew up in Boston, MA. With a firm belief in the All- American. We had our fair share of ground beef. My better half grew up in Eastern Europe. Anything without meat was bland and tasted like cardboard. To not eat meat was sacrilege.
