This dressing for this salad can be used with all sorts of things. 8 oz uncooked whole-wheat spaghetti, or buckwheat soba noodles. 2 1/2 Tbsp low-sodium soy sauce. 2 Tbsp canola oil. 2 Tbsp rice wine vinegar. 2 tsp dark sesame oil. 1 1/2 tsp ginger root, freshly grated. 1/2 tsp minced garlic. 1/4 cup(s) scallion(s), sliced, divided. Molly had a nasty run in with a semi truck on Interstate 64 outside of Morehead KY.
