Quickly roasted in a dry pan (cut in half first), then minced fine. 1/2 a medium white onion, chopped fine and rinsed. 1 plum tomato, seeded and chopped* handful cilantro, rough chopped. 3 medium-large avocados, scoop out with a spoon, leaving the flesh in chunks. Friday, January 23, 2009. This is a great one to freeze. It makes 10 enchiladas, I freeze half. 15 lbs ground beef. 2 cans chili beans. 1 jar enchilada sauce. 10 tortillas (8 in). Cook beef and onions until meat is done; drain. Stir in the beans, half of the enchilada sauce and salsa. In a skillet, heat 1/4 in. of oil.
