Wednesday, December 9, 2009. Loaded Baked Potato Chowder. This is a pampered chef recipe. It is WAY yummy and so easy. Enjoy! 3 large baking potatoes. 3 1/2 c. milk, divided. 4 oz cream cheese, softened. 2-3 green onions with tops. 4 oz sharp cheddar cheese, grated. 1 1/2 tsp salt. 1/2 tsp. coarsely ground black pepper. I got this recipe at a church activity and it is so yummy (and so easy)! 2 tbls cooking oil. 1 small red onion (I usually just use a white one because that is what I always have). 1/2 lb rib eye steak, thinly sliced. 2 cups broccoli florets. 1/2 of small carrot sliced (although I never measure the carrots or broccoli). 1/4 c oyster sauce. 2 tbls. sesame oil. Heat oil in wok/pan. Stir fry onions until translucent. Add the beef and stir fry until browned. Serve over hot rice.

A yummy recipe from Pampered Chef. 1 medium green bell pepper. 1 medium red bell pepper. 2 boneless skinless chicken breast halves (abt. 4 oz. each). 2 pkg (10 oz) refrigerated pizza crust. 1 tsp vegetable oil, divided. 1-2 tsp pampered chef Southwestern Seasoning Mix (if you don't have this the recipe mentions using 1 tsp chili powder and 1/2 tsp ground cumin, or I'm sure you could just taco seasoning or fajita seasoning). 1/4 c thick and chunky salsa. 2 c shredded cheese.

They are really easy and REALLY good! 1lb ground pork, beef, or chicken. 1 pkg rice sticks/bean threads; soak in hot water until soft, drain water and cut. 1 bunch green onions, chopped. 1 pkg Chop Suey Mix. 1 pkg shiitake mushrooms (wood ear); soak in hot water till soft, julienne. 2 tbls oyster sauce. Salt and pepper to taste. 1 pkg Lumpia Wrappers ( 30 count). Mix all ingredients raw, wrap in lumpia wrappers.

Friday, April 24, 2009. Chicken Cordon Blue type dinner. I got this from my sister so I really don't know what the actually name of it is. It is quite yummy though. We made it last night and everybody enjoyed it; although I did cook it alittle too long - the chicken was alittle dried out. Just watch it! 4 boneless, skinless chicken breast halves. 1/2 lb. deli-sliced cooked ham. 1/2 lb. baby Swiss cheese, sliced. 10 3/4 oz can cream of chicken soup. Prep Time: 10 minutes. Cooking Time: 6-8 hours.
