The broccoli is just florets that you put in liberally salted (like the ocean) water for 3-4 minutes. Then you drain them and dress them with a little olive oil, some lemon zest, and course sea salt. Maybe that’s because I didn’t like steak that much as a kid, or maybe because we only had it more as a treat, but I am virtually positive we didn’t have ribeye (I’m sure my mom will correct me if I’m wrong…hi Mom! It takes 2 hours and is essentially a few vegetables and spices cooked in beef stock to “beef” up the stock. Not too challenging and I don’t need it for anything else in the courses ahead.
