Recipe Redux - Enchilada Bake. Monday, August 3. Recipe Redux - Enchilada Bake. Our family has been doing more vegan meals and one of our new favorite dinners is Enchilada Bake. It is based off of this one. It is beautiful and yummy and this picture is from the original as well rather than mine. 1 cup uncooked quinoa, rinsed. 1 tablespoon olive oil. 1 onion, diced. 3 cloves garlic, minced. 1 red pepper, seeds removed, diced. 1 orange pepper, seeds removed, diced. 1 bag frozen corn. Juice of 1 small lime.

Thursday, March 19. There is one good thing about mud season. It gives some of the best tracks. Here are a couple we saw one a recent hike. This one was easy for Froggy to identify. Tuesday, May 27. Our big objective for the summer is to get Froggy proficient in really riding her bike. Our first adventure was almost our last. It was a one mile ride up to the library. Froggy was insistent she could not make it up the hill. She turned around and headed home. At the bottom of the hill, she asked how far we were. I told her we were about 2/3s. Menu Planning Monday - Thanksgiving Week. Monday, November 24. Menu Planning Monday - Thanksgiving Week. We are going to vegetarian friends for Thanksgiving Day which means a very non-traditional meal. Shabbat will. Have all the traditional foods instead. Given that we will have two days in a row of heavy meals, the rest of the week is extra light. I am on break for the holiday which means the whole family can eat together. Tuesday - BFD - scrambled eggs and pancakes. Wednesday - Wild Rice Salad.

Thursday, April 24. This year we went on a bluebell hike with friends who joined us on our first ever bluebell hike. That was probably four years ago maybe more. Two of her kids did not even exist on the initial hike. It was a very very bittersweet hike. I was too engrossed in the hike and the company to take many pictures. New Friends, New Tech. Art with her Aunt. Tuesday, January 6. New Friends, New Tech. Froggy had her very first Google Hangout today with a new friend in Quebec. They both avid readers without many local Jewish friends. We were a bit caught of guard with the technical challenges. We were expecting a text-based chat and ended up on a video call. When does no mean never? Friday, May 22. When does no mean never? It is so hard sometimes to know the right path, to open your heart and hear the divine message. How do you know if the horrible suffering you are experiencing is a test you need to push through or a sign you are headed down the wrong path? It is really really hard to be told no over and over and over again while other people are being told yes all around you and not believe NO is your only option. When is it time to pack up and go away?
