油揚げめん と ノンフライめん 熱風乾燥めん. めんは、乾燥方法の違いによって大きく 油揚げめん と ノンフライめん 熱風乾燥めん に分けられます。 油揚げ は、めんを入れた金属枠ごと140 160 の揚げ油に入れ、1 2分通過させます。 生地の段階で30 40 あった水分がここで3 6 になり、でんぷんのアルファー化がさらに進みます。 この方法によるめんを、 ノンフライめん 熱風乾燥めん といいます。 このふたつ以外の方法として、蒸煮しためんを有機酸 主に乳酸、クエン酸、酢酸、リンゴ酸など で処理した後に殺菌する 生タイプ即席めん があります。 このでんぷんを、2 3分の簡単な調理でおいしく食べられるように、蒸気の熱によって胃で消化できる状態に変化させることを アルファー化 といいます。 油揚げめん と ノンフライめん 熱風乾燥めん とで成分が大きく異なるのは、水分と脂質になります。 逆に、脂質は 油揚げめん が20g前後であるのに対し、 ノンフライめん は油で揚げていないので、4 6gと 油揚げめん の4分の1くらいの量です。 世界初 カップめんミュージカル WE ARE THE NOODLE.
