Thursday, September 8. 500 ml unsweetened soy milk. 15 g gelatine, dissolved in 30 ml hot water. 1 drop mango flavouring. 1 drop yellow colouring. 1 ripe mango, sliced and cut into small strips. Combine soy milk, gelatine and honey in a pan. Stir to mix well. Add mango flavouring and colouring to soy milk mix. Mix well. Pour soy milk into moulds and refrigerate for about 3 hours. Soy Milk Chicken Vegetable Soup. 400 ml home-made chicken broth. 1 1/2 cups frozen mixed vegetables. 2 cups unsweetened soy milk. 6 crabsticks, diced. 100 g chicken breast, steamed and cubed. 1/2 packet silken tofu, diced. 1 tbsp cornstarch mixed with 2 tbsps water. Saturday, September 10. 2 tbsps olive oil. 2 cloves garlic, minced. 1 carrot, peeled and diced. 1 stalk celery, peeled and diced. 1/2 medium-sized zucchini or brinjal, diced. 1 cup canned corn kernels. 1 cup chicken stock. 1 cup conned chopped tomatoes. Salt and pepper to taste. 1 cup cooked small macaroni shells. 1 tbsp chopped fresh parsley. 2 tbsps grated Parmesan cheese. 1 tbsp bottled basil pesto. Heat olive oil in a pan over medium fire. Brown onion and garlic for about 2 mins. Set aside.
