http://thegamebird.blogspot.com/2015/08/potato-rosemary-focaccia.html
The Game Bird Food Chronicles. Monday, 17 August 2015. Potato and Rosemary Focaccia. I really love baking my own bread and the sense of satisfaction that I get from doing it is well worth the very minimal effort that goes in to doing it. I know that I have said this before but once you get ‘a feel’ for it and understand what it is that you are trying to achieve, you realise that it is actually quite easy. There are a few basic rules and tricks that will help you ensure faultless results. The following re...

The Game Bird Food Chronicles: Pineapple Tarte Tatin
http://thegamebird.blogspot.com/2015/08/pineapple-tarte-tatin.html
The Game Bird Food Chronicles. Thursday, 6 August 2015. This version is full of the tropical flavours of pineapple and dark rum and is absolutely delicious. You do need to use a fresh pineapple to make it as tinned fruit is too flaccid and disintegrates when you initially cook it in the caramel before finishing off in the oven. Luckily fresh pineapples are relatively cheap at the moment, so it is quite an economical dish to make. 1 vanilla pod, split in half and seeds scraped out. Preheat oven to 200C/Fa...

The Game Bird Food Chronicles: Restaurant Review: An Port Mór, Westport, County Mayo

The Game Bird Food Chronicles. Wednesday, 5 August 2015. Restaurant Review: An Port Mór, Westport, County Mayo. Despite all of this, I was passing through Westport recently and on a whim decided to ring An Port Mór, a restaurant that I have long wanted to try, to see whether they might have a table free for me. Luckily they were able to squeeze me in and so it was that I found myself dining alone, contrary to my normal inclinations. Which along with lovely fruity olives also included sun-dried tomatoes a...

The Game Bird Food Chronicles: January 2015

The Game Bird Food Chronicles. Saturday, 31 January 2015. Walnut and Rosemary Fougasse. Fougasse is a type of French bread which originates in Provence, but is now found. In bakeries throughout France. With the growth in popularity, generally, of artisan bread making it is often found for sale in farmer’s markets and specialist bakeries here in Ireland. This would make a lovely accompaniment to a bowl of hot homemade potato and leek soup in winter or as one of a selection of breads at a picnic in the sum...

The Game Bird Food Chronicles. Thursday, 30 April 2015. Restaurant Review: The Oarsman, Carrick-on-Shannon. Once we were seated bread was delivered to our table. On offer were slices of a soft white and a dark, treacle-rich brown soda bread. Although both were lovely, the soda bread was particularly delicious and had a complexity of flavour which suggested the inclusion of walnuts and perhaps oats. The bread came with a generous amount of butter on the side which always pleases me. To start we chose:.

The Game Bird Food Chronicles: August 2015
http://thegamebird.blogspot.com/2015_08_01_archive.html
The Game Bird Food Chronicles. Tuesday, 25 August 2015. We have had no summer to speak of this year and the weather seems to have mainly consisted of chilly temperatures and rain… LOTS of rain! Despite this, I still like to pretend that we actually do get sunny days; days where picnics can be enjoyed and summery foods can be eaten. I like to use a selection of berries, but you can also use segmented sweet citrus fruits such as clementines and satsumas which are wonderfully zingy and taste delicious. ...

The Game Bird Food Chronicles. Friday, 31 July 2015. Fudgy Chocolate Brownies with Malt Ice-Cream and Coffee Liqueur Syrup. I know I have mentioned this before, but my three children are obsessed with chocolate and cannot understand why everything I bake does not include it in some form. The truth is, although I like chocolate, I can also take it or leave it and it doesn’t set my heart aflutter in the same way that it does others’. I have not included nuts in this recipe as my children prefer that they b...
