Why torture ourselves with the faint hope of a barbecue opportunity when we can just fire up the trusty hob under a griddle pan? 1 long red sweet pepper. About 1 tsp olive oil, plus extra for rubbing. 2 shallots, finely chopped. 1 bay leaf, torn in half. 1/2 tsp cumin seeds. 1/2 tsp cardamom pods, crushed seeds removed if you don't like chewing on the husks. 1/3 mug (100g) white long-grain rice.

These sound like luxury-end nosh don't they, but I made them from odds and ends: the Brazil nuts and precious few raisins from a bargain bag of mixed nuts and raisins (see the Clementine, Date and Nut Muffins. 40g roughly chopped Brazil nuts or other unsalted nuts. 175 g plain flour but 1 tbsp replaced with 1 tbsp cocoa powder. 40g mint chocolate, roughly chopped. 20g raisins, chopped if large. 3/4 tsp bicarbonate of soda.

Asparagus Risotto - islandcook.org.uk. GRIDDLED ASPARAGUS, HERB and LEMON RISOTTO. 1 bunch of asparagus, woody bases trimmed, well washed. 2 tsp olive oil, plus extra for brushing. Small knob of butter. 2 shallots, finely chopped. Heaped 1 tsp chopped fresh thyme leaves. 4 mint leaves, chopped. 2 wild garlic leaves, washed and patted dry, then rolled up and sliced, or 1 small garlic clove, crushed. 1 small glass Noilly Prat or dry white wine. 100g Arborio (risotto) rice. 20g Parmesan cheese, finely grated.

Pared zest (using a zester) and juice of 3 minneolas, satsumas or small oranges. 4 tbsp elderflower cordial. 3 tbsp good-quality light agave syrup. 200g organic porridge (rolled) oats. 70g pecan nuts, chopped. 1 tsp each mixed spice and ground ginger. 1/2 tsp ground cinnamon. Pinch of low-sodium salt. About 1/2 x 500g carton vanilla or plain Alpro Soya yogurt.

These generous, squidgy muffins are another creative use for those budget nets of clementines (or opt for mandarins if they're a better deal), along with some of the nuts from that knocked-down bag I plundered for the Mint Choc and Nut Biscotti. 90g shelled mixed unsalted nuts. 375g clementine segments (any hanging bits of white pith removed). About 5 tbsp ginger wine or sherry, or juice from the clementines. 2 large eggs, beaten.
