Authentic and Traditional South Indian Iyengar recipes. Uppu cheedai (Salt Seedai). Rice flour - 1 aahakku (200 grams). Urid dhal flour (Ulutham paruppu maavu)- 1 tablespoon. White Sesame - 1/2 teaspoon. Salt - 1/2 teaspoon. Butter - 50 grams. Use the above ratio for preparing larger quantities. Heat urid dhal in a dry pan. Roast till it turns red. Grind this in a mixer grinder. Filter the urid dhal flour using sieve and keep this ready. Filter rice flour using the sieve and keep this ready.

Authentic and Traditional South Indian Iyengar recipes. Avakkai Oorugaai (Mango Pickle). Avakkai Mango - 6 (Medium size). Red chilly powder - 200 grams. Mustard (kadugu) powder - 200 grams. Salt - 130 grams. Gingely oil (Nallennai) - 3/4 (three fourths of a litre). Fenugreek (vendhayam) - 1 tablespoon. Cut the mangoes. ( Make sure the seed shell is present. Do not remove it ). Dry mustard in hot sun and powder it in a mixer grinder. Mix mustard powder, salt and red chilly powder thoroughly.

Authentic and Traditional South Indian Iyengar recipes. Inji thuvaiyal (Ginger thuvaiyal). Ginger - 50 gm. Urid dhal (ulutham paruppu) - 4 teaspoon. Red chilly - 5. Tamarind - 1 small gooseberry size. Asafoetida (perungaayam) - small piece. Salt - for taste. Sunflower oil - 2 teaspoon. Jaggery - betel nut size. Thoroughly wash ginger and peel the skin. Chop the ginger to small pieces. Heat 1 teaspoon of oil in a pan, add ginger and fry till raw smell goes away. Let it cool for 5 minutes. Ginger - 50 gm.
