For the First Thyme. Friday, December 30, 2011. I have to say that although chocolate and banana in a muffin was a kinda weird combination, I did like these muffins quite a bit. I think next time I make them I'll try it without the cocoa and see if I can make them more like a banana chocolate chip muffin. Medium bananas, mashed. 1/4 cup 2 Tbsp unsweetened apple sauce. 1 1/4 cups white whole wheat flour. 1/4 cup unsweetened cocoa powder. 3/4 tsp baking soda. 2 large egg whites. 1/2 tsp vanilla extract.

For the First Thyme. Tuesday, November 29, 2011. Two Ingredient Pumpkin Spice Cookies. These are super easy because they only use two ingredients and they taste really good! I make them for a small gathering of friends when my family was visiting and everyone loved them. It calls for a can of pumpkin but I used 2 cups of my homemade pumpkin puree. 1 box spice cake mix. 1 can pumpkin puree. 1 Mix the two ingredients together. 2 Spoon onto greased baking sheet and bake at 350 degrees for 10-12 minutes.

I'm not sure when I'll get around to writing more posts. (I'm considering changing and revising the blog a bit so we'll see if I ever get around to it.) Don't worry though, I'm back to cooking again! About two months ago I started cooking a little more again; however, I'm still not doing as much as I use to. It's kinda sad, but I'm just super busy :).

Friday, January 25, 2013. 1 cup Greek Yogurt. 1/4 cup brown sugar. 1 1/2 teaspoons cinnamon. 1 1/2 teaspoons ginger. 1 1/2 teaspoons baking powder. 1 teaspoon baking soda. 2 cups white whole wheat flour. 1/2 cup white chocolate chips (optional). 1 Preheat oven to 350 degrees and grease muffin tins. 2 In a large bowl, mix wed ingredients until well combined. 3 Add remaining dry ingredients and stir until just combined. 5 Remove from oven and cool on a wire rack. School is going great!
