Steps of the Ceremony. Kaiseki is the meal served at the beginning of the ceremony, intended to only slightly fulfill hunger. The menu can consist of:. Nimono (food cooked in broth). Yakimono (broiled fish, vegetables, etc). Hassun (tray with one delicacy from land and one from sea). Brown rice with hot water. Sake is the Japanese rice wine that accompanies the entire meal. The meal and flavorings must account for these five basic tastes:. Sweet: compliments bitter tea. Sour: eaten with sake.
