Apparently there is an annual Riggifest in upstate New York. 4 T olive oil. 1 sweet onion, finely chopped. 2 or 3 garlic cloves, minced. 2 chicken breasts, cut into bite-size pieces. 1 jar (370 ml) of roasted red peppers, drained and julienned. 1 28 oz can of diced tomatoes, drained. 1/2 tsp garlic powder. 1/4 tsp sugar and black pepper. Red pepper flakes or 1/4 tsp cayenne (optional). 3/4 C heavy cream.

Chicken breast sliced in half ( I do mine horizontial for a skinnier chicken). 1 Tbs, of cream cheese placed in the center of raw chicken breast. Jalepenos sliced up layer on top of Cream cheese. ( use as much as you want. or if your like me you will leave out the jalepenos and get creative with the spices in your cuboard to mix in with the cream cheese instead.). Repeat as many as needed.
