Steamed pork bun - pork belly, cucumber and hoisin sauce. Striped trumpeter with blood orange. White asparagus, marron and szechuan pepper. Beef with radish and fermented black bean. Smoked eel with Jerusalem artichoke and pink grapefruit (omitted in this case due to allegies). Mud crab with butter, pepper and pudding.

For us, pan fried pork buns are a must order. They're nice, but not the best pan fried pork buns that I've ever had. I didn't experience the much loved gushing of piping hot juices after my first bite in so they were slightly dry, instead being succulent and juicy little morsels that I adore. Sunday, May 13, 2012. Pork Belly Confit and a Pork Masterclass at Restaurant Atelier. I went to a Pork Masterclass at Restaurant Atelier. In Glebe and was so inspired. It was the first time I had been in a professional kitchen and the chef Darren is an incredible bloke, he instantly made us feel welcome and at home. The pork belly is placed in a roasting dish with fat, covered with foil and then cooked on low in the oven for 5 hours. The belly is then cut into neat slices and the skin crisped up in a pan.
