Friday, June 26, 2009. The Very Best Zucchini Bread. 1 tsp baking soda. 1 tsp baking powder. 3 tsp ground cinnamon. 2 1/4 cups white sugar. 3 tsp vanilla extract. 2 cups grated zucchini. 1 cup choped nuts, optional. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees. Sift flour, baking powder, soda and cinnammon together in a bowl. Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted. Ingredients to the creamed mixture and beat well. Stir in zucchini and nuts.

I have learned (in 25 years of parenting) that it is important to know where your child is, who his friends are and what he is doing. I figure that if I keep baking cookies and brownies and heating up pizzas for the band I'll at least know where he is every Friday. Sara e.a.*.
