Monday, August 17, 2015. With the kiddos being back in school, I wanted to find an easy but healthy breakfast for them. I ran across this. Recipe and had to try it. I love that I can make these every Sunday and then keep them in the fridge for an easy breakfast through the week. I also bought the Silicone baking cups. Off of amazon before I made these. (Mine came in a pack of 24 but I only needed 12 for this recipe). Shredded Mild Cheddar Cheese. Sauteed Zucchini, red bell pepper, and sweet yellow onion.
