A Life Worth Chasing. Guyanese Pumpkin & Roti Recipe. October 1, 2014. 1 small yellow onion. 2 wiri wiri peppers (scotch pepper). 1 tsp salt to start (add more to suit your taste). Dash of black pepper. Dash of any dried herbs you like. 1 sprig of thyme. 1/2 tsp curry powder. 1/2 tsp brown sugar. This recipe is just a foundation, you can add any additional seasonings you prefer. Chop pumpkin into large pieces and peel skin off. Cut each large piece of pumpkin into smaller 1/2 inch pieces. Set aside.

We did not know who our host family would be up until the point we were standing in front of them one afternoon. The Peace Corps then turned us over to them, and off we went. Group of Peace Corps volunteers in Guyana were sworn in to begin a two year commitment to service.
