My least favorite amongst dairy desserts is rice pudding, but this version I found in Kate Zuckerman's The Sweet Life. 1/2 cup plus 2 tbs basmati rice. 1 can (13 1/2 oz) coconut milk. 1/2 c plus 2 tbs sugar. 1 c whole milk. 2 c heavy cream. 1 tsp vanilla extract.
