The whole premise is simplicity; preparing each veggie well and letting the flavors complement one another. It’s so healthy, as you’ll see, but flavorful in a. Addictive way. Chocolate Fluffernutter Whoopie Pies. Maybe you don’t know about whoopie pies? I think they hail from Lancaster County, PA (but I might think this because I live in PA – maybe people in Maine think they are native to Maine? Fluffernutter on white bread on seldom occasion. Either way – these are a big time crowd pleaser. They freeze AMAZINGLY, which is nice because the recipe makes a big batch. Would be great for a potluck dessert this summer! Seseme, Snow Pea and Asparagus Salad. Healthy yet somehow indulgent and addictive. I mean, vegetable indulgent, not chocolate cake indulgent. Peanut Butter Chocolate Ice Cream Pie Home Beccanomics
http://www.homebeccanomics.com/2015/07/13/peanut-butter-chocolate-ice-cream-pie
Peanut Butter Chocolate Ice Cream Pie. This was EASY. And I mean it (Lindsay Ridell I really mean it). For summertime entertaining this is a no brainer. It serves 8-10 and can be made days in advance, not to mention it takes about twenty minutes of “effort time” to put together. And really, who doesn’t love ice cream desserts and peanut butter chocolate desserts (this checks both boxes). This dessert was just that – easy enough that I didn’t really care how the diners responded. That bein...2 tbsp. p...

Cheesy Baked Polenta with Swiss Chard Home Beccanomics
http://www.homebeccanomics.com/2015/07/06/cheesy-baked-polenta-with-swiss-chard
Cheesy Baked Polenta with Swiss Chard. I’d been buying this organic polenta to slice and fry up for an easy side dish so it was in my cheese drawer, right next to the mozz and parm. Could thinly sliced polenta work for lasagna sheets? Now, polenta is more grainy (it’s a coarse corn meal) than chewy so though the meal tasted like lasagna, the chew was definitely different. Did I enjoy this even though I could have eaten the standard version? Cheesy Baked Polenta with Swiss Chard. 1 tbsp. olive oil. 5 Driz...

Best Chocolate Frosting Home Beccanomics

My friend Susan makes a vanilla layer cake – every time I eat it I check, just to make sure, that she’s using the boxed cake mix and hasn’t found the recipe I’m seeking. I want to make vanilla cake from scratch that I enjoy eating as much as boxed cake mix. Makes enough for to frost 9 in. cake or 12 cupcakes. Adapted from America’s Test Kitchen. 20 tbsp. unsalted butter, softened. 1 1/2 c. powdered sugar. 1/4 c cocoa powder. 1/8 heaping tsp. kosher salt. 3/4 c light corn syrup. 1 tsp vanilla extract.

Chicken Caprese Home Beccanomics
http://www.homebeccanomics.com/2015/06/22/chicken-caprese
Though typically “make ahead” is a descriptor I seek, it does not describe this dish. Anytime you’re broiling cheese to the point of golden and bubbly, you want to serve it ASAP for the best texture and flavor. Maybe from now on I’ll only make foods that involve “golden and bubbly cheese”, because life is short and that sounds delicious. Could you add freshly grated parmesan or oregano to this dish? Could you bread the chicken and fry it till golden? 2 large chicken breasts. 1/3 c fresh basil leaves.
