The Pride of the South Island: Crayfish in Kaikoura. The beauty of New Zealand's South Island is second to none and the abundance of fresh seafood that can be found there is a real treat. Kaikoura is famous for its crayfish and you just have to try it to understand why. There are a few roadside caravans selling freshly caught crays just North of the sleepy seaside town, but the most iconic and renowned is Nin's Bin. 100g Caster Sugar(plus a few pinches for the topping). 6 large free-range Egg Yolks. First, preheat the oven to 150c. Take a medium sized saucepan and add the cream. Split your vanilla pod and scrape out the seeds into the cream. You can also chop the pod itself and add it into the mix for extra flavour. Now strain your mixture into a measuring jug using a fine sieve. After 40mins or so, carefully remove from the bain marie and set aside to cool to room temperature.
