Monday, February 19, 2007. 6 (1 inch-thick) round slices fresh pineapple, cored. 3 tablespoons granulated sugar. 1/3 cup fresh pineapple juice. 1 (9 by 18-inch) sheet puff pastry. 2 tablespoons whole milk. 1/2 cup crema, for garnish. 1/3 cup heavy whipping cream. 6 tablespoons cold unsalted butter, diced. 2 teaspoons pure vanilla extract. 3/4 cup granulated sugar. 2 to 3 tablespoons water. 3 tablespoons Myer's dark rum (I mistakenly used ). 1 pinch kosher salt.

Monte Cristo Sandwich Blue Bayou. 1/8 t white pepper. Few drops yellow food coloring. 2/3 c all-purpose flour. 1 3/4 t. baking powder. Place water, egg, salt, pepper and food coloring in a bowl and using an electric mixer, mix well at low speed. Add flour and baking powder and mix until batter is smooth. Chill.
