Sure enough my mission was accomplished, I was 1st in line for the 6th annual ACBeerfest! Once inside there was a lot of drinking and conversing with reps and brewers, along with lots of picture taking. The Next post will consist of those photos and descriptions. Monday, February 28, 2011. So an update on the brews, The Wit is chugging along nicely and the IPA is just in the beginning stages of fermentation. I'm off work tomorrow and planing to keg "Deez Nutz" Brown ale. It should be ready to drink by the weekend. Here are some pics of the beers in action. Friday, February 3, 2012. So I've been slacking on posting here, but a lot has happened since my last post. I'm currently apprenticing at Carton Brewing Company. In Atlantic Highlands, NJ. It's been an awesome learning experience, I've been brewing on a Newland Systems 15bbl brewhouse. It's like "Glorified" home brewing. In addition to brewing with Carton, I've also learned about kegging, filtering and proper cellaring procedures. Makes you appreciate the craft when you have to stir the Mash by hand.

Tuesday, March 22, 2011. It has been awhile since I have posted, so todays post it a Mega Post! A lot has happened. For starters The wit is in the secondary, and has about another week before I keg/bottle it. It was a six gallon batch so I'm planing on kegging five and bottle conditioning the other gallon. The color is nice and light, almost as light as a pilsner but a little bit darker. It smells peppery and taste nice and dry. The final gravity was 1.008! Cool Picture of the Grains!
