Sunday, November 20, 2011. Chocolate-Orange Cake Balls and Whoopie Pies. I decided to make Chocolate-Orange Whoopie Pies with Orange Cream cheese frosting. Surprisingly everything was going according to plan… until I went to remove the Whoopie cakes from the pan. Half of them came out perfectly from one of the pans but the other half absolutely refused to release. Not a single one came out of the separate pan and I was forced to scoop them out, crumbling them into bits. 189; cups butter (room temperature).

The spice topping creates a sweet flaky crust across the top, its perfect! Monday, August 26, 2013. Somerset Easter Biscuits (Raisin Spice Cookies). I LOVE tea and cookies. Wow, I feel like I sound about 95 years old when I say that. Eh, who cares! I wasn't always a tea and cookies kind of girl. Over the last couple of years tea has become a morning (and afternoon) ritual that I look forward to and rarely miss. No doubt I've always liked cookies, but I mostly leaned towards the very sweet ones.you know chocolate chip. It's impossible to eat just one. And a variation of these.

Thursday, July 4, 2013. Peanut Butter Fudge Swirl Ice Cream. Happy 4th of July! I saw this recipe on my pal Tracey's blog. And instantly knew this would be the first ice cream churned of the summer at my house. It was. And it was pretty darn fantastic. The ice cream base delivers on a solid peanut butter flavor. Monday, December 20, 2010. Is Christmas really 5 days away? How did that happen? Christmas can't go by without baking homemade ginger snap cookies. That would be criminal. The warm spices of ginger and cinnamon in a chewy molasses cookie sing Christmastime to me. Gingersnaps are a staple in my annual holiday baking tradition. Oh, and they are delicious. The dough needs to be covered and refrigerated for at least an hour up to overnight. I like to use my trusty number 60 cookie scoop. 2 tsp ground ginger.
